Sweet Honey Pumpkin Muffins

These Sweet Honey Pumpkin Muffins capture the essence of fall in every bite. Whether you’re enjoying them with a hot cup of apple cider or sharing them with loved ones, they’re sure to bring warmth and comfort to your season.

What you will need:

  • 1 1/2 cups flour

  • 1 1/2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup packed brown sugar

  • 1 1/2 tsp cinnamon

  • 1/4 cup softened butter

  • 1 cup honey

  • 1 egg

  • 1 cup canned pumpkin purée

  • 1 cup toasted almonds

How to make it:

  1. Preheat your oven to 350°F and line your muffin tins with paper liners.

  2. Heat a medium pan over medium-high heat. Add the almonds and toast, flipping regularly, until golden and fragrant. Let the almonds cool.

  3. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, brown sugar, and cinnamon until well combined.

  4. In another bowl, beat the softened butter until light and creamy. Add the honey, egg, and pumpkin purée, mixing until fully incorporated.

  5. Gradually add the dry ingredients to the wet mixture, stirring until no flour streaks remain. Gently fold in the toasted almonds.

  6. Divide the batter evenly among the muffin cups and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove the muffins from the oven and transfer them to a cooling rack. Serve warm or at room temperature.

Please note:

  • You can substitute almonds with walnuts, pecans, or any of your favorite nuts.

  • For an extra touch of flavor, try adding dried cranberries or a handful of chocolate chips!
