These spiced, chewy cookies are sweetened with honey, adding a rich depth of flavor that pairs perfectly with ginger and cinnamon. What you will need:

  • 3 cups all-purpose flour

  • 1 teaspoon baking soda

  • 2 teaspoons ground ginger

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon ground cloves

  • ¼ teaspoon salt

  • ½ cup unsalted butter, softened

  • ¾ cup honey

  • ½ cup brown sugar

  • 1 egg

  • 1 teaspoon vanilla extract

How to make it:

Preheat Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

  1. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt.

  2. Cream Butter and Sugar: In a large bowl, beat the butter, honey, and brown sugar together until light and fluffy. Add the egg and vanilla extract, mixing until combined.

  3. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.

  4. Chill the Dough: Divide the dough in half, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  5. Roll and Cut: On a lightly floured surface, roll out the dough to about ¼ inch thick. Use cookie cutters to cut out shapes and place them on the prepared baking sheets.

  6. Bake: Bake for 8–10 minutes, or until the edges are lightly browned. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

  7. Decorate (Optional): Once cooled, decorate with icing, sprinkles, or candies as desired.
