Sweet Potato Casserole with Honey!

Celebrate the holidays with a delightful sweet potato casserole that features a luscious honey glaze! This dish combines the natural sweetness of baked sweet potatoes with creamy textures and a crunchy topping, creating a comforting and satisfying side that will elevate your festive meal.

What you will need:

  • 4 large sweet potatoes (about 2 pounds)

  • ½ cup honey

  • ½ cup milk (or heavy cream for a richer flavor)

  • ¼ cup unsalted butter, melted

  • 1 teaspoon vanilla extract

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon salt

  • 1 cup chopped pecans or walnuts (optional)

  • ½ cup brown sugar (for topping)

  • 2 cups mini marshmallows

How to make it:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish.

  2. Prepare Sweet Potatoes: Peel and chop the sweet potatoes into chunks. Boil in a large pot of salted water until tender, about 15-20 minutes. Drain and let cool slightly.

  3. Mash Sweet Potatoes: In a large bowl, mash the sweet potatoes until smooth. Stir in honey, milk, melted butter, vanilla extract, cinnamon, and salt until well combined.

  4. Transfer to Baking Dish: Pour the sweet potato mixture into the prepared baking dish, smoothing the top with a spatula.

  5. Prepare the Topping: In a small bowl, mix the chopped pecans or walnuts with brown sugar. Sprinkle this mixture evenly over the sweet potato layer. Then, evenly distribute the mini marshmallows on top.

  6. Bake: Bake in the preheated oven for 25–30 minutes, or until heated through and the topping is golden and the marshmallows are toasted.

  7. Serve: Allow to cool slightly before serving warm.

Decoration Ideas:

Top your casserole with additional mini marshmallows and broil for a minute or two for a toasted finish, drizzle with extra honey before serving, or add a sprinkle of cinnamon for a festive touch!
