No Bake Granola Bars

Get ready for a snack that is as easy to make as it is delicious! These quick, no bake granola bars provide a not only a healthy bite, but also a sweet treat that is perfect for the entire family.
What you’ll need:
4 cups of instant oats
2 -2 1/2 cups of dried cranberries and raisins
1 1/2 cups of peanut butter
2 spoonfuls of coconut oil
1 tsp. of vanilla extract
1 1/4 cups of honey
1/2 cup of mini chocolate chips
How to make it:
Start by lining a baking sheet with parchment paper. The size of the sheet will depend on how many bars you want to make and how thick you want them to be.
In a mixing bowl, combine your instant oats, dried fruit, and mini chocolate chips.
Melt your peanut butter, coconut oil, and vanilla extract together in a saucepan on low heat
Once melted, pour your peanut butter mixture into the bowl with your oats, fruit, and chocolate chips. Stir everything together until well combined
Press mixture into the baking sheet, use the bottom of a mug to compact everything together
Place your granola mixture into the refrigerator for an hour, or into the freezer for quicker results
Once chilled, remove the granola mixture from the fridge or freezer and cut it into bars of your desired size
